Chocolate chip Brookies

I love brownies. I love cookies. What is better than both of these things? A BROWNIE COOKIE! I adore these so much and I could just eat them for every meal. They are pretty rich, so I suggest making smaller cookies or having them with milk. For an extra layer of flavor, add some peanut butter to the brownie mix or the cookie mix. Can you say drool?

Ingredients:

MAKE CHOCOLATE CHIP COOKIE FIRST so that it can go in the fridge while you make the brownie.

For the Chocolate Chip Cookie:

  • 1 and 1/4 C flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt or sea salt
  • 7 Tbsp coconut oil or salted butter
  • 1/2 cup packed dark brown sugar
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • 1 C milk chocolate chips or until your chocolate craving is satisfied. I don’t judge. (I use Ghirardelli milk chocolate, just try it. You won’t regret it.)

For the Brownie:

  • 6 Tbsp coconut oil or salted butter
  • 1/2 C melted chocolate chips
  • 1 C flour
  • 1/2 C peanut butter (optional, but recommended)
  • 2 Tbsp unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 C packed dark brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 C chocolate chips (not melted)

Directions:

For the Chocolate Chip Cookie:

  1. Add together the flour, salt, and baking powder in a mixing bowl.
  2. Melt the butter and mix together with sugar and vanilla until it is a smooth, sugary mixture.
  3. Add the eggs to your butter and mix in the flour mixture with a rubber spatula until it is an even dough. Gently add in the chocolate chips.
  4. Cover and place the bowl in the fridge for 45 minutes. DO NOT skip this step. When you are ready to bake, take it for about ten minutes and work with it after it is slightly softened.

For the Brownie:

  1. Mix butter or coconut oil and melted chocolate chips together in a pan on the stove top. Make sure to stir constantly to avoid burning the chocolate. Remove from the heat and stir to make sure all lumps are gone.
  2. Mix together flour, salt, cocoa powder, and baking soda.
  3. Add both sugars and vanilla to the chocolate mixture and beat until smooth (I advise a kitchen aid or a good sturdy arm). Add in the eggs. Mix in flour mixture with a spatula. Add peanut butter if you are using it and chocolate chips to the dough.

Now, to the baking:

  1. Preheat oven to 350* F. Prep your baking sheets with parchment paper.
  2. To make each cookie, take a Tbsp of each dough and place them side by side. mold the brownie dough around the chocolate chip cookie dough so that it looks like a half moon. I like to smoosh mine down a bit so that they bake more evenly. Again, you can play around with the size and cooking time if the larger cookies are too much for you.
  3. Put your cookies in the oven and bake for about 12 minutes. The key to great cookies is to take them out when they still look like they need another minute or two and let them set at room temperature. These cookies will look done around the edges and the top but still look under done in the middle. Let the cookies cool for ten minutes- if you can wait that long! Enjoy!
