Meatless meal planning for families with kids

Hello! Had the inclination to go meatless? Have you already gone meatless and are getting bored with the same few recipes? My family and I have been meatless for a while (see my future post about what it is truly like to go vegan) and we definitely get stuck in food ruts. I can tell we need to shake things up when we have eaten oatmeal several days in a row or I can’t figure out what to make for lunch because we have already eaten rice bowls twice in a week (not that we mind). I have found that it is easiest to make a list of all our options and keep it on the fridge or in my notebook so that I can look and be reminded that there are many options out there- even for us veggie heads! I hope this list of our meals helps to show you that there are so many options, and there are truly so many more than I have listed here.

Every item I have posted is specifically geared toward families with children and have been toddler approved. Trust me, my child does not eat ANYTHING, so if they work for her, hopefully they will work for your children!
